“Day vs. Night: Dining Habits Shift as Customers Prioritize Price and Luxury”

At The Birds & Beets in Vancouver, Matthew Senecal-Junkeer runs a cafe that shifts from serving sandwiches and coffee during the day to offering wine and small plates at night. Senecal-Junkeer has observed a change in customer spending habits between day and night. Daytime customers are more price-conscious, making decisions based on cost, such as choosing between oat milk and regular dairy or adding avocado to a sandwich. This has led to an increase in sales of cheaper menu items during the day, while pricier items have seen a decline.

In contrast, evening patrons at the wine bar show less concern about prices. They are more willing to indulge in higher-priced menu items without hesitation, viewing it as a luxury experience where they prefer not to focus on minor expenses.

According to a report from Restaurants Canada, restaurants are facing financial challenges, with quick-service establishments being hit harder than upscale dining venues. This trend reflects a “K-shaped economy,” where those with higher incomes can afford upscale dining experiences, while lower-income households are forced to cut back on discretionary spending due to economic instability.

The report also highlights that fine dining restaurants have experienced an increase in traffic, indicating stronger sales and profitability in the high-end dining sector. However, both full-service and quick-service restaurants are struggling, with a significant percentage reporting lower sales and profitability.

Rising fuel costs are expected to further impact restaurant expenses and consumer behavior. Quick-service restaurants may serve as an early indicator of broader challenges within the restaurant industry. Competition from grocery stores and changing consumer preferences may lead to decreased patronage at quick-service establishments, affecting job opportunities, especially for young workers.

Chef Mike von Massow underscores the challenges faced by quick-service restaurants, especially as consumers seek value deals amid financial constraints. The shift in consumer behavior towards planning ahead and opting for healthier dining choices could impact the quick-service sector.

On the other hand, fine dining establishments like Pearl Morissette are thriving, with high-end dining becoming a sought-after experience for patrons. Despite the economic challenges, upscale restaurants are maintaining their allure, offering patrons a special and impressive dining experience.

For Senecal-Junkeer, balancing price sensitivity and rising costs poses a dilemma in deciding whether to adjust menu prices. While his food costs have increased, he aims to strike a balance between maintaining margins and attracting volume by making modest price adjustments.

The evolving dining landscape reflects changing consumer behaviors and economic realities, with restaurants navigating challenges to meet customer demands and stay competitive in the market.
